Matcha White Chocolate Macadamia Nut Soft Cookies💚

For my Vegan Chocolate Chip Cookies, These cookies are always a lot of work—or as some might say, a true labor of love. To replicate the buttery, toasted caramel notes of traditional chocolate chip cookies, I make and add my own roasted almond butter. Each bite is nut-packed and satisfying, combining crunchy roasted almonds, hazelnuts, walnuts, and Brazil nuts with oat milk and rich chunks of 70% dark chocolate and salted caramel vegan chocolate.

It’s also a lower-sugar recipe, letting the richness of the chocolate shine through—no odd coconut flavor and none of that overly sweet, plain sugar taste. Just toasty, chewy, indulgent goodness that’s 100% plant-based.

Eat them warm with a glass of oat milk—you’ll never believe they’re vegan.

Ready for a tea party? 🍵

I had some leftover egg whites in the fridge after making gelato, so I made some Viennois cookies with them. We have:

🌱 Earl Grey
☕ Hojicha
🍵 Matcha

As a tea lover, I'm obsessed! 💚 It's also fun to see how, with the exact same recipe and ratio, the Hojicha batch turned out differently. Since it was my first batch, I wasn’t sure what shape I was going for. I ended up piping it out, then putting it back and piping it out a few times. The warmth of my hands melted the butter in the batter, which caused it to spread out more. Still tasty nonetheless! And they are so perfect with a cup of tea 🫴🏻✨

Black Sesame Basque Cheesecake topped with Earl Grey White Chocolate Ganache ☕

It was a surprisingly delightful combo,the deep roasted flavor of Black sesame and unique floral note the Earl Grey plus the tanginess of the Cream cheese, combined with the slight caramelization of the Basque, somehow it works. The idea behind it is really just cooking with what I have, I found some Earl grey in the back of my pantry(make some Poundcake with it as well), and I have leftover grind black sesame form the puppy cookies, I don't have any cream cheese lying around, But what I have was milk and lemon juice, and that is all I need for homemade cream cheese 🫴🏻✨

Earl Grey Pound Cake with Earl Grey Cream Icing

I'm in a bit of a pound cake craving lately, and I found a box of almost empty Earl grey in the back of my pantry, so here we go 🫴🏻 ✨ The rich, floral notes of earl grey tea perfectly complement the buttery, crumbly texture of a classic pound cake, and when the aroma of freshly brewed earl grey tea mix with the sweet sense of vanilla sugar and cream wafting through your home, it's just such a delight in a autumn day, you'll love it if you're a tea lover like I do. ☕

Ingredients(for 18cm mold):

Cake:
80g butter
80g icing sugar
2 eggs
1 tsp vanilla extract
9g honey
88g cake flour
1/2 tsp baking powder
1/2 tsp salt
2 bag of Earl grey tea

🥟Frozen dumplings🥟 are a staple in my house – the perfect late-night snack or emergency meal. Every time, I push the limit to see how many veggies I can pack into them. This week’s batch has zucchini, sweet corn, spinach, carrot, and bok choy.

It took some trial and error to find the perfect dumpling skin – chewy, not too soft or thin. After testing different flour and starch combinations, here’s my go-to recipe:

✨Dumpling Skin Ingredients:

400g all-purpose flour
40g potato starch
30g neutral oil
1 tsp salt
180-190g water

Kneading Method (三揉三醒):

"三揉三醒" means knead and rest the dough three times until it's smooth and clean ("三光": dough, bowl, and hands clean).

Instructions:

1. Mix all ingredients, knead until no flour remains.
2. Cover and rest for 5 minutes.
3. Knead for 30 seconds to 1 minute until smoother. Rest another 5 minutes.
4. Knead once more, then rest for 15 minutes.
5. The dough is ready to wrap!

*Tip: If you don’t have potato starch, corn or tapioca starch will work, but potato starch gives just a little bit more chew.

🍌 Banana Bread ✨

Finally have some perfectly ripe bananas lay around the house to make banana bread, not too far gone and be completely forgotten, just the right amount of spots 😆 Personally, not a big fan of cinnamon, spices or nutmeg in my cake(I know, I'm vanilla like that),so just banana, walnuts and a little bit of chopped dark chocolate 🍫 chopped is the key here ✨you want a little pocket of chocolate surprised here and there, but not so much that it turns into a chocolate cake, just the right amount 😁

Recipe:
3 Ripe bananas
113g butter
140g light brown sugar
210g AP flour
2 large eggs
a pinch of slat
1 tsp vanilla extract
1 tsp baking powder
80g of chopped roasted walnuts
20g of chopped 70% dark chocolate

🍂Bake at 180c for 50-60mins
✨Like any butter base cake, warped it in plastic wrap after cold down, and let it sit overnight, then you'll have the moistest and most tender cake

🎱 Black Sesame Soft Cookies with White Chocolate and Walnuts 🐈‍⬛

This cookie is the result of "let's see how many uses I can get out of this bag of discounted roasted black sesame." And it has been great! I've already made a batch of black sesame butter cookies, ice cream, and used it as a topping on bagels, dumplings, and sometimes rice, etc. I just love black sesame 🖤.

I think the flavor of black sesame really came through after blooming it in the butter for a bit, but I’ll probably switch the white chocolate to something else next time—it's a bit too sweet for this cookie 🍪.

🎱 Black Sesame Soft Cookies with White Chocolate and Walnuts 🐈‍⬛

This cookie is the result of "let's see how many uses I can get out of this bag of discounted roasted black sesame." And it has been great! I've already made a batch of black sesame butter cookies, ice cream, and used it as a topping on bagels, dumplings, and sometimes rice, etc. I just love black sesame 🖤.

I think the flavor of black sesame really came through after blooming it in the butter for a bit, but I’ll probably switch the white chocolate to something else next time—it's a bit too sweet for this cookie 🍪.

The backup cake 🍰🎂✨

It might look similar, but this is a chocolate devil cake with Chocolate Nutella ganache buttercream; I even added some chocolate chunks to the batter because of how thiccck and heavy the devil was; I mixed the ganache with some buttercream to give it more structure and stability.

It tastes very moist and riccccch, tho the frosting ... Well, not my best work lol I really tried, but I think this is the best I can do for now 🙈 all and all, I'm very happy, we have two edible cakes for the big day 😆

It might look similar, but this is a chocolate devil cake with Chocolate Nutella ganache buttercream; I even added some chocolate chunks to the batter because of how thiccck and heavy the devil was; I mixed the ganache with some buttercream to give it more structure and stability.

It tastes very moist and riccccch, tho the frosting ... Well, not my best work lol I really tried, but I think this is the best I can do for now 🙈 all and all, I'm very happy, we have two edible cakes for the big day 😆

I haven't really really baked a cake cake for a long long time, like a cake that you need to frost and decorate, to increase the success rate of we would actually have a cake on Mr. Yang's birthday, I decided to bake two 4-inch (10cm) small cake and have a cake testing a few days before 🙈 Thanks to the baking God, both turn out decently I would say.

This one is a 4 layers oil-based chocolate cake with a Nutella chocolate ganache, topped with Strawberry and blueberry, it's a decent, lovely chocolate cake, but I noticed because it's so small, even with a really rich recipe it's still a little bit dryer than a "normal size" cake, even I already brush it with sweet coffee mixture, but this is also the reason I bake two cake, to test it out and have a backup plan 😆✨ but the ganache tho, damn, it's so dreamy and rich.

Sidenote, I don't even have a cake stand here, have to improvise with my Dutch oven lid lol, well, it spins, and gets the job done, and for frosting, I forgot everything about it, a rustic look is the best I can do 🙈

適逢老闆生日，佢又成日話想食韓燒，但又冇行動，我決定係屋企搞個韓餐，其實也沒煮什麼大菜哈哈哈，第一次做的有兩個菜，蒜香脆烤五花肉，說是烤其實比較像炸哈哈哈，先將五花腩出水，放涼，再放油裡半煎炸，同時油裡放入了蒜頭，蒜頭金黃色的時候取出來，壓成醬，五花炸到皮脆面面金黃再取出，放涼後切片就可以開吃啦😆因為開了油就順手炸了雞，平常做都是氣炸多，油炸還真是第一次，不得不說，脂肪就是美味呀✨，果然是油炸的好吃🤌🏻

這個菜單沒什麼大菜，滿好做的，就是備料比較費時，要切的東西比較多，最大挑戰還是切肉，半退冰手切肉片，切完十隻手指都還在就很不錯🤣另外自己打了個胡麻醬，吃起來有8成像kewpie的，心滿意足了😆

Matcha soft cookies with White Chocolate and Roasted Macadamia Nut 🌱

Probably one of the best things I have ever made, I was craving for something matcha the other day, and this came into my head, I didn't look up any recipes this time, just use the ratio of my chocolate chip cookie recipe, and improvise on that, would add more matcha powder next time, I add about 8.5g because that's all I have left🤣 also out of light brown sugar, so I just used half dark brown sugar mix with white one, if you want that green green look of the matcha, better stick with light brown sugar, but I won't switch to full white, we still want that molasses in our soft cookies 🍪

I was out of eggs at this point, but I still wanna make some black sesame cookies, since I got that nice bag of roasted black sesame 🏴 I switched things up a little bit, I usually used this recipe for piping cookies(and I'm also out of piping bag_(:3 Z)_), they are softer and a little bit more crumbly/ tender, I adjusted the flour level a bit to help it stayed in shape, but as you can see, it does look different than the ones with eggy in it 🥚but personally I prefer the mouth feel of this crumbly soft cookies and with the ground roasted black sesame, this has become one of my favorite ✨

Mini fluffy milk bread

A loaf of soft and fluffy milk bread! 🍞🥛A mini loaf between a toast and dinner roll.

This is the third version of the recipe, as I'm adjusting the flavor and hydration level to make it more suitable for hand kneading. Glad to say I finally found the happy balance! Not too sticky to work with by hand, but still moist and decadent. It tastes even better after it cools down and reabsorbs the moisture a little bit—the richness of the butter and milky flavor really comes through. 🤍

Ingredients:
- 190g milk
- 300g bread flour
- 20g cream
- 20g sweetened condensed milk
- 1 tsp honey
- 20g Greek yogurt
- 30g butter, softened
- 3g instant yeast
- 1 tsp salt

Instructions:
1️⃣ Warm the milk and activate the yeast.
2️⃣ Mix wet ingredients (cream, condensed milk, honey, yogurt).
3️⃣ Combine all ingredients and let the dough rest in the fridge for 30 minutes.
4️⃣ Do two sets of folding and slap the dough against the table, then shape it for 5 minutes. Add the butter and continue to slap and shape for another 5 minutes.
5️⃣ Let rise until doubled in size.
6️⃣ Shape, let rise again.
7️⃣ Bake at 160°C (320°F) for 30 minutes.
8️⃣ Cool and enjoy!

After a few tries, I finally got the hang of making homemade focaccia, took a while to get those decent bubbles, but I would argue big bubbles and small bubbles are all good bubbles, even a dense focaccia is still a delicious focaccia, it's basically a moist dough fried in EVOO, how could it be bad 😆

And the crunchy crackle...oh THE SYMPHONY OF CRACKLE, damn...and the process from mixing the dough to letting it rise and baking has become a nice new routine for me, and I will say the 17g protein bread flour is the real hero here, that thing practically rises itself.

Cheesecake ice cream cookies sandwich ✨

This one has been sitting on my to-do list for ages, finally, it's time 😁 I made 3 flavors, matcha, coffee, and strawberry, the filling is a mix of butter, cream cheese, and white chocolate, and after a little bit of fridge time, it has a month feel of creamy ice cream🍦 I was worried that after freezing the butter cookie will get soggy, but to my surprise, after a night in the fridge, the cookies still stayed crunchy! Matcha of course is my favorite, the strawberry because instead of dry strawberry I use strawberry jam, with the white chocolate, it's just a tap bit too sweet 😬 but all and all it's a fun summer treat to make, next time I'll get a breathable mat to get that uniform look ✨

I hand cut the shape of JIJI and Totoro, it really is not the cleanest cut ever, but thanks to the forgiving buttery cookies recipe, it turns out fine after baking 😆

Recipe:
Unsalted butter 210g
Salt 3g
Powder sugar 100g
Two egg yolks (roughly 50g)
Cake Flour 410g

Beat the living shit out of the butter till it turns white and fluffy, then add one egg yolk at a time, then add the rest of the ingredients, separate the dough and add color, rest at room temp for a bit, then start the fun part🔪 roll and cut.

I added matcha for the green, red beet powder for the red, Bamboo Charcoal Powder for the black and gray, Cocoa powder for the brown, used white and dark chocolate for the eyes and noses.

The white chocolate really kills me for a bit, will probably switch to royal icing next time 😆 ( even tho it might take forever to dry).

Highly recommend trying it out, the endorphins that my brain produces after making this are out of the world 😬🌿✨

I'm low key so proud of how it turns out! Ever since I saw the Ghibli cookies set online, I wanna make it myself!!! Any bakeaholic out there feel me!! I thought of making a mold out of the milk box or something for Kiki and Totoro, but end up just using a tiny knife and hand cut all of the shapes 😆 glad it turned out ok, thank you for the forgiving butter cookie recipes.
